Peachy Fairy Quinquina | Absinthe Cocktail Recipe

Peach and anise meet Lillet Blanc to create an aperitif that's just... well... peachy!

If you’re looking for a tasty aperitif to enjoy before a meal, look no further than the Peachy Fairy Quinquina!

The Lillet Blanc is the most important part of this recipe. The quinine in it is excellent for stimulating the appetite and better helping you digest your food.

Adding the flavors of absinthe and peach gives the cocktail a bit more weight and tempers the bitterness without burying it.

For the cognac, I use Courvoisier V.S. which is a good “taste meets price” option that’s widely available.

As for the absinthe, I recommend going with an absinthe verte. Particularly one that is very anise forward since you don’t want that to get masked by the other flavors.

I most enjoyed this cocktail using Vieux Carré, though it also turned out well using St. George absinthe verte. If you want more of the brandy flavor, go with St. George.

Note that we’re not shaking this with ice since we don’t want any dilution of the flavors. That means it’s extra important that you serve this in a chilled coupe glass to enjoy it cold!

Ingredients

  • 1 ounce Cognac
  • 1 ounce Lillet Blanc
  • 1 ounce Peach Brandy
  • 1/4 ounce Absinthe Verte
  • 1 peach slice

Instructions

  1. Add the cognac, Lillet Blanc, peach brandy, and absinthe into a cocktail shaker (no ice!).
  2. Shake thoroughly.
  3. Strain into a chilled coupe glass.
  4. Add peach slice and serve.
